Why I Started a Blog About My Journey as a Plant-based Chef and Restaurant Owner: A Personal Story

A Passion Ignited
Cooking has always been a significant aspect of my life, and adopting a plant-based lifestyle at a young age further fuelled my interest in the kitchen. While I also have a strong passion for music, family, and football, it was delving into the realm of cooking that truly ignited my enthusiasm.

How it all started
The decision to step into restaurant ownership came naturally - a desire to create a space where plant-based cuisine isn't just a trend but a way of life. Curating a menu that celebrates the abundance of nature while tantalising taste buds became my mission. And so, my journey from chef to restaurant owner unfolded, one kale leaf at a time.
My career began in retail, where I worked for prominent brands before transitioning to my first role in the hospitality sector at Jamie Oliver's Restaurant in Nottingham. Following some travel experiences, my partner (Lauren) and I decided to move away from big corporations and began searching for a cozy cafe to run together.
I have never undergone any formal training in cooking; instead, my own curiosity and passion for learning, along with trial and error, have brought me to where I am today. As a determined individual with a strong competitive drive, I am always pushing myself to achieve more.
I have always been fascinated by the art of cooking, although I never had the opportunity to receive formal training in culinary arts. Instead, I relied on my insatiable curiosity and unwavering passion for learning to navigate the intricate world of flavors and techniques. Through countless hours spent experimenting in the kitchen, I have honed my skills and developed my own unique cooking style. My journey in the culinary realm has been defined by a relentless pursuit of excellence. Every dish I create is a testament to my dedication and commitment to pushing the boundaries of my abilities. I thrive on the challenges that come with trying new recipes and exploring different cuisines, constantly seeking to broaden my culinary horizons. Despite the lack of formal education, I have never let that hinder my progress. In fact, it has only fueled my determination to succeed. I firmly believe that passion and perseverance are the keys to unlocking one's full potential. With every dish I prepare, I am reminded of how far I have come and how much more I can achieve. Cooking has become not just a hobby, but a true passion that drives me to constantly strive for greatness. The kitchen is my playground, where I can unleash my creativity and express myself through the art of food. Through trial and error, I have learned valuable lessons that have shaped me into the cook I am today. In essence, my lack of formal training has only served to strengthen my resolve and deepen my love for cooking. It is through my own determination and competitive spirit that I have been able to carve out my own path in the culinary world, constantly pushing myself to new heights of culinary excellence.
In 2017, we established a cozy café with seating for 16 people at 12 Hounds Gate. This marked the beginning of 12 Hounds Gate Cafe, where we introduced a range of vegan and vegetarian brunch and lunch choices. The café quickly gained popularity, prompting us to expand our offerings to include supper clubs and tasting menus despite working from a small kitchen equipped with a domestic oven and a four top hob. By 2019, recognising the need for more space, we sought out a new location and discovered a charming old Victorian mill. This led to a rebranding as No.Twelve. Following an extensive renovation process, we proudly reopened our doors to the public in November 2019.
Since then, we have successfully navigated the challenges posed by the COVID-19 pandemic, the rising cost of living, and exorbitant energy bills. Our achievements include winning numerous awards for our innovative approach, exceptional service, and delicious food. Our dedicated team of chefs and front-of-house staff are like family to us. We take great pride in our accomplishments and look forward to sharing more with you.
