Plant-Based Giant Crumpet for the Ultimate Breakfast Delight!

Ingredients:


  • 360g plain flour

  • 480ml lukewarm water

  • 2 tsp baking powder

  • Pinch of salt

  • 9g dried yeast

  • Vegan butter for greasing


Creates one very large or 10 individual crumpets. (if you want to create smaller versions please use a greased metal ring to pour the batter into)


Instructions:


  • Activate the yeast: Place the dried yeast in a large mixing bowl and pour in the lukewarm water. Stir for a minute.

  • Add dry ingredients: Combine the flour, baking powder, and salt. Mix thoroughly to ensure even distribution of ingredients. Cover the bowl with cling film and allow it to ferment.

  • Prepare the pan: Spread vegan butter on a large frying pan or skillet and heat over medium heat.

  • Cooking the giant crumpet: Pour the batter into the pan, shaping it into a large circle. Cook for a few minutes until bubbles appear on the surface. Use a clean, dry toothpick to burst the bubbles. Continue cooking until the center of the crumpet is almost done.

  • Finish in the oven: Before transferring to a baking tray, brush some butter around the edges of the crumpet. Place the giant crumpet on a baking tray and bake in the oven at 200 degrees for an additional 5 minutes, or until it turns golden brown.

  • Serve and enjoy: Once perfectly cooked, move the giant crumpet to a plate. Garnish with your preferred plant-based spreads, fruits, or syrups. Let your creativity shine and customise it to your liking!
