Let's Get Cooking!

Step 1: Preparing the Yeast Mixture

In a mixing jug, add 125g of warm water and the 7g sachet of dried yeast. Stir until combined, then set aside for 10 minutes to activate the yeast.

Step 2: Mixing the Dry Ingredients

In a large mixing bowl, add 300g of bread flour, 1 tsp of salt, 1 tsp of nigella seeds, 1 tsp of mixed dried herbs, and ½ tsp of baking powder. Mix well to evenly distribute the ingredients.

Step 3: Adding the Wet Ingredients

Make a well in the center of the dry ingredients and pour in 150g of coconut yogurt, 2 tsp of caster sugar, half (25g) of the melted plant-based butter, and the yeast mixture. Using a fork or spatula, gradually mix everything together until a dough forms.

Step 4: Kneading the Dough

Lightly flour a clean surface and transfer the dough onto it. Knead the dough for about 10 minutes until it becomes smooth and elastic. The dough should spring back when poked. If it’s too sticky, sprinkle a bit more flour. Once smooth, form the dough into a ball.

Step 5: Resting the Dough

Place the dough in a lightly greased bowl, cover it with a tea towel or cling film, and let it rest in a warm spot for 1 hour or until it has doubled in size.

Step 6: Shaping and Cooking the Flatbreads

After the dough has risen, divide it into 8 equal portions. Roll each portion into a ball, then flatten it using a rolling pin to form circular shapes.

Heat a dry non-stick frying pan over high heat. Add one flatbread at a time, cooking each side for about 1-2 minutes, or until it bubbles and turns golden. Flip and cook the other side until done. Brush the hot flatbreads with the remaining melted plant-based butter and sprinkle with a bit of salt.
